Salary: County Paid Position - Exempt Grade C 7 - $1,556.00 Bi-weekly
Salary Range For Internal/Rehire Applicants: $1,556.00 - $2333.60 Bi-weekly

Position Purpose And Examples Of Work:
- To manage staff in the efficient operation of institutional kitchens involving the planning, storing, preparation and service of nutritional food in a safe and professional manner.
- Requisition, inventory and inspect foodstuffs and supplies; prepare/maintain related documents, and reports, including specific USDA requirements.
- Oversee the operation of multiple institutional kitchens which store, prepare and serve nutritional meals and snacks to resident youth.
- Develop and implement specified operational policies and procedures.
- Plan menus and requisition foodstuffs in accordance with USDA dietary and nutritional components.
- Ensure compliance with USDA and ACA record keeping and operational requirements; review USDA memos and policy changes.
- Receive and examine foodstuffs to ensure quality and quantity meet established standards and specifications.
- Inspect kitchen areas for security, safety, maintenance, health and sanitation purposes.
- Investigate and resolve a variety of operational problems and provide input.
- Review discontinued products and research for replacement products that meet specific USDA guidelines.
- Perform health and safety inspections and take corrective action as necessary.
- Develop and provide department reports as necessary.
- Manage staff in the operation of institutional kitchens; lead, direct, guide and train staff.
- Conduct and/or participate in interview process and make hiring recommendations.
- Assess staff performance.
- Forecast, monitor and request budget allocations and expenditures
- Forecast and prepare for immediate and short term needs and objectives; provide input into operating budget and execution.
- Authorize vendor invoices for payment.
- Assist with reviewing, monitoring and creating annual budget.
- Advise, assist and consult with immediate supervisor, Facility Managers and Residential Nurses on various matters.
- Advise, assist and consult with immediate supervisor to formulate, implement and sanction policies and procedures and provide recommendations and input for long-range needs and objectives, such as the purchase of kitchen equipment.
- Prepare, plan, and coordinate food services duties for Court approved events.
Minimum Education And Experience:
- Education above the minimum stated may be substituted on a year for year basis for the required general experience; experience above the minimum stated may be substituted on a year for year basis for the required education
- Associates degree or equivalent course work in trade or specialized coursework; Nutritional or dietary education.
- Bachelors degree in Nutritional or Dietary Education, Food Science, Restaurant Management or related field preferred.
- Three years directly related work experience in institutional food preparation. Experience must also include a minimum of two years supervisory experience in an institutional food service operation.
- Knowledge of dietary and nutritional requirements and related USDA guidelines.
- Knowledge of food service health and sanitation laws and guidelines.
- Knowledge of expenditure and inventory control.
- Knowledge of basic financial record keeping; knowledge of budget preparation and monitoring.
- Knowledge of and ability to operate a wide variety of institutional kitchen equipment and utensils in a safe and prudent manner. Knowledge of computer operation (Word, Excel, USDA software).
- Knowledge of effective supervisory and management techniques.
- Knowledge of personnel practices and procedures.
- Ability to communicate effectively, clearly and concisely, both orally and in writing, and to prepare clear and concise reports, letters and other documents.
- Ability to establish and maintain effective working relationships with others.
- Ability to organize, supervise and coordinate departmental activities in a manner conducive to full productivity.
- Ability to make sound decisions in accordance with laws, regulations and Court policies and procedures.
- Ability to relate in a positive fashion to individuals from a variety of cultural, economic and ethnic backgrounds.
Special Requirements:
- If driving non-court vehicle for Court business, must have auto liability insurance and properly licensed and reliable vehicle.
- Must be able to provide proof of the above.
- Must submit to and pass criminal background check as prescribed by Courts, Sex Offender Registry check, and MO and KS Child Abuse and Neglect checks.
