Lautrec Restaurant Kitchen Captain
The Lautrec Restaurant Kitchen Captain is a full time year round position featuring a competitive wage and benefits. The Lautrec Restaurant Kitchen Captain will assist in expediting service and insuring a smooth flowing bridge between the kitchen and dining room while reporting directly to the chef and restaurant manager. The Lautrec Restaurant Kitchen Captain will also lead the education of all food and menu product from the kitchen to the servers and all other FOH representatives. The Lautrec Restaurant Kitchen Captain will also uphold all service standards to maintain Lautrec Restaurant 5 Star & 5 Diamond award status.
The Lautrec Restaurant Kitchen Captain Duties:
Be the main "liaison" between the kitchen and the front of the house. To act as the expeditor, "garnisher", and kitchen leader in the absence of a chef.
Assist the chef in expediting the flow of service pick-ups and delivery throughout service. Order, fire, pickups etc.
Work towards proper position walks from the kitchen by working with the front waiters to acquire position numbers.
Work with the chef on food descriptions and menu terms – to become the FOH "food expert" through communication with the kitchen and information provided by the chef.
Create a more fluid (and daily) learning environment during daily pre-shifts about the menu products we serve.
Assist in final plate wipes and garnishes.
Supervise Server assistants' and busser pre shift duties, service duties and closing duties.
Act as the lead SA in terms of closing side-work checks. Lead in buffet set-up, tear down, and effectively "own" all borrowed materials from other departments.
Lead SA's in proper care and maintenance of daily tools, including knives, bread oven, flatware, etc. Order coffee, linens, teas / Adaco etc. following proper ordering procedures.
Set up front expediting line – Soup set-up, plates, doilies, serviettes and Hors' d'oeuvres trays / set ups when needed.
Set up expediting station per chef on a daily basis. To keep the front of the house informed of all menu changes.
Work with chef and stewarding on china inventory, storage, and any other means necessary to avoid breakage. Deep cleaning when necessary. To create and execute a completed organization chart of every table in the dining room, allowing all food to be delivered immediately and without question to our guests.
Qualifications: High School diploma is required; an Associates or Bachelors degree with a Hospitality or Culinary focus is preferred
Possess 1-2 years of fine dining FOH experience or 1-2 years of fine dining culinary experience
The ability to possess complete knowledge of a fine dining menu and educate others on menu knowledge
The ability to communicate efficiently and effectively and provide menu trainings
The ability to organize and expedite service on a daily basis
The ability to constantly striving to become better and more knowledgeable, exceeding the level of service up on a daily basis. The Lautrec Restaurant Kitchen Captain must be able to speak English
